Today we have a special treat as my friend Alberto has agreed to write about a tradition that I love; gathering mushrooms. This is a very common activity to do in the autumn in Spain, so much so that in some places you require a permit to pick mushrooms.
I enjoy the whole experience, walking in the fresh air, the forest, the anticipation, the thrill when you actually find some mushrooms and the pleasure of finally cooking and eating them. However this is not always the case and sometimes you go home with an empty basket.
Here is the tale of Alberto and his mushroom expedition in Cuenca, let's see if he had any luck.
A POR SETAS EN OTOÑO

A quien, como yo, es amante de la naturaleza no le hace falta ninguna razón adicional para disfrutar de un paseo por el campo. Más si este se da en un entorno natural agradecido como es la Serranía de Cuenca.
If you are like me and love nature you don't need an additional reason to go out for a walk in the countryside. Even more if it's in a beautiful location like the Serranía of Cuenca.
Esta provincia española, situada en el interior, en la zona central de la península, cuenta con una zona montañosa, La Serranía, a una de cuyas comarcas, El Campichuelo, acudo con frecuencia debido a que la familia de mi mujer es natural de un pequeño pueblo de allá, de nombre Arcos de la Sierra.
This Spanish province is situated inland, in the center of the peninsula. It has a mountainous area called "La Serranía", I often visit "El Campichuelo", one of its districts, as my wife's family are from a small local village called Arcos de la Sierra.
Al pasear por allí, solo la combinación de reposar la vista en un bonito paisaje, sentir la brisa en el rostro junto con los olores de las plantas, y notar la quietud que transmite el silencio reinante solo roto por sonidos del viento en las ramas, de aves e insectos, algún curso de agua… me basta para que el paseo sea en sí una agradable actividad.
The combination of the beautiful views, feeling the breeze on my face, the smell of plants and the silence, only broken by the sound of the wind blowing through the branches, birds and insects, water flowing...is enough for me to enjoy walking there.
Pero quizá sea más grato aún, si hay alguna motivación adicional, como es la búsqueda de setas. Para empezar, la época en la que se dan, el otoño, ya me resulta especialmente atractiva: tras los calores del verano de España, me gusta ese punto de frío que acompaña a la estación, junto con la humedad del ambiente y el cambio de olores provocados por las primeras lluvias y por supuesto la coloración de la vegetación, con los típicos, ocres y amarillos, que se notan hasta en un entorno como esta sierra donde no abundan las especies de hoja caduca.
However, an additional motivation such as mushroom hunting makes the walk even more pleasurable. I find autumn, the season mushrooms grow in, specially appealing. After the Spanish hot summer I enjoy the slight coolness that this season brings, the moisture in the air and the new scents that arrive with the first rains. And of course the colour of the vegetation, with its typical ochres and yellows, which stand out in this mountain range where there aren't many deciduous species.
La recogida de setas es una actividad tradicional que ha formado parte desde siempre del modo de vida de los pueblos, ya que ha supuesto un recurso más entre los disponibles para contribuir a la economía de los habitantes, al recogerlos para consumo propio y para venta.
Collecting mushrooms is a traditional activity that has always been part of village life. It is an additional resource that contributes to the local economy as people either consume them themselves or sell them.
En la sociedad actual, donde tantas comarcas y pequeños pueblos se han vaciado de población estable, se puede decir que la mayoría de personas que acuden a recoger setas somos gente de la ciudad, vinculadas o no a esos pueblos, y como actividad de ocio y disfrute de la naturaleza.
In today's society, where many counties and small villages have lost their stable population, so you could say that most people who go mushroom picking are from the city. Some are linked in some way to the village and others aren't. They pick mushrooms as a hobby and to enjoy nature.
Tanto es así, que a veces la gente que acude a la búsqueda de setas, es excesiva para lo que sería conveniente, llegando a algún caso en el que las autoridades municipales se han visto obligadas a regular la recogida mediante la concesión de permisos. Afortunadamente, esto aún no ha llegado a Arcos de la Sierra, así que este otoño me había propuesto acudir a disfrutar de su entorno y probar suerte con la búsqueda de setas.
So much so, that sometimes too many people go mushroom picking, therefore, in some cases, the council authorities have been forced to regulate mushroom gathering through permits. Luckily this is not the case yet in Arcos de la Sierra, so this autumn I was hoping to go and enjoy its surroundings and try luck at mushroom hunting.
Sin embargo no soy ningún experto en su reconocimiento. Como es sabido, las hay tóxicas, incluso mortales y la única garantía para evitar estas, es reconocerlas, aspecto que solo se adquiere con mucha experiencia, más allá que lo que se pueda leer en guías o ver en fotografías.
However, I am not an expert at recognising them. As you well know, there are toxic ones, even deadly and the only way to avoid these is to know how to recognise them, a skill that you acquire not just by reading guides or photographs but with lots of experience.

Tenía la esperanza de contar, para la ocasión con la compañía de algún amigo de la zona, conocedor tanto de las setas comestibles como de los lugares concretos donde mejor se dan, pero no fue posible su presencia, así que, me tuve que conformar con buscar la única especie que reconozco: el níscalo, a pesar de que en la zona se dan varias otras como son, por citar algunas: la seta de cardo, el boletus o las macrolepiotas.
On this occasion I was hoping I would be able to be in the company of some friends that know both how to recognise edible mushrooms and where to find them. However it wasn't possible, so I had to settle for looking for the only species I know: saffron milkcap, even though I know that in the area there are several others such as: king oyster mushrooms, boletus or parasols.

Hay otra circunstancia importante que condiciona el éxito en la búsqueda de setas y es la lluvia que haya caído durante todo el año. Incluso, en la zona de la que hablamos, los lugareños consideran además que para que se den setas en otoño -octubre, noviembre- debe haber llovido algo en agosto. Esto, la verdad, es cada vez más difícil, con el cambio que se está produciendo en el clima del planeta. Para terminar, si todo lo anterior se produce, el terreno estaría -o así lo entiendo yo- con la preparación previa adecuada en cuanto a humedad, para una buena germinación de las setas.
The amount of rainfall that has fallen during the year is another important fact that will impact the success in finding mushrooms. Local people from the area say that there needs to be some rain in August in order for mushrooms to grow in autumn -October, November. Unfortunately this is becoming harder due to climate change on our planet. If everything above takes place, the ground would be prepared for the successful germination of the mushrooms.
No obstante, también es necesario (😰) que esa humedad se mantenga con lluvia unos 7-10 días antes de cuando se pretendan encontrar las setas y que después haga buen tiempo (🤪).
However, it is also necessary(😰) that the moisture is kept, so it must rain 7-10 days before you want to go out to gather mushrooms and then it needs to be nice weather (🤪).
Aunque muchas de las circunstancias necesarias para esperar éxito en mi búsqueda de setas no se daban: ni amigos conocedores, ni lluvias adecuadas -este año sí llovió en los meses previos, incluso en agosto, pero no unos días antes-, no me desanimé y me propuse encontrar siquiera algún níscalo. Como decía al principio, incluso en el caso de no encontrar ninguno, el placer del paseo y de la búsqueda ya justifica la salida…. y si encuentras alguno, a mí al menos, se me genera una especie de adicción y no puedes evitar ir mirando entre las agujas de los pinos a ver si asoma entre ellas el deseado níscalo.
Even though many of the circumstances that were necessary for the success of my hunting expedition weren't there: mi expert friends, the right amount of rainfall -this year it did rain in the previous months, even in August, but not a few days before-, it didn't put me off and I was determined to find at least one or two saffron milkcaps. As I said at the beginning, even if I didn't find any just the pleasure of the walk and the search justify the outing...and if you find one it generates a sort of addiction, at least in my case, and you can't help but search amongst the pine needles to see if you can spot the desired saffron milkcap.
Así que salí a probar suerte, pertrechado con los utensilios necesarios, que tampoco son tantos: una navaja para cortarlas y un recipiente para transportarlas; si queremos hacer las cosas bien, este debe ser una cesta de mimbre para que por las rendijas puedan ir cayendo las esporas de las setas al suelo del monte y contribuir así a su germinación. Por la misma causa, es conveniente colocar las setas con las láminas hacia abajo. El corte no tiene mucho misterio: se hace por debajo del sombrerillo dejando, eso sí, algo del pie de la seta en la tierra, para que el impacto sobre el hongo que está enterrado y del que forma parte la seta sea mínimo.
So I went off to try my luck, carrying the necessary utensils, which aren't that many: a pocket knife and a container to transport the mushrooms; if we want to do things right this must be a wicker basket so that spores can fall to the ground through the gaps and that way aid their germination. For that same reason it is advisable to place the mushrooms with their gills looking down. The way to cut them is easy: cut below the cap making sure you leave part of the stem in the ground, that way the impact on the buried mushroom will be minimised.
El resultado que obtuve no se puede calificar de éxito, teniendo en cuenta que encontré unos 6 níscalos. Menos mal que siempre aparece algún familiar o amigo más experto, que en su salida encontró más y me regala las suficientes para culminar como corresponde la recolección de setas: disfrutando de alguna de las muchas formas de preparación en la cocina que ofrecen las setas. Dependiendo principalmente de la textura de cada tipo de seta, algunas formas de preparación son más indicadas que otras. En el caso del níscalo, a mí me gustan mucho guisadas con patatas. Pero se pueden preparar de muchas otras formas: revueltas con huevo, con arroz, al ajillo son algunas de las más populares.
I couldn't really say the outing was a triumph, as I only found around 6 saffron milkcaps. However it is a good job that there's always a more expert relative or friend who has found more and will give me enough to end the day as it should: Enjoying one of the many different mushroom recipes. The best way to cook them will depend mainly on the texture of each mushroom. I really like saffron milkcaps stewed with potatoes but you can prepare them in many different ways: scrambled, with rice or stir-fried with garlic are some of the most popular ways to cook them.
